Home/Media Server - pure OS or Docker using Kitematic GUI

Hi everyone,

I'm about to build my Home/Media Server that shall centralize all my media collection in one place with periodic back-up functions for crucial data (e.g. pictures) to both external drive and cloud service. Just in a few words I want to share my hardware considerations but what I'm looking for is advice regarding software solution as per title.
Hardware (main elements):
1. Case - Lian Li PC-Q25, although Mini-ITX case but has 5 hot-swap 3,5" bays in case of drive failure,
2. CPU - i5 7500T or 7600T, only 35W with but more than enough horsepower for future 4K@60Hz,
3. Mobo - some mini-ITX Z270 based with M.2 slot and 5-6 SATA6 for storage,
4. SSD - Samsung 960 EVO Series, M.2 SSD for OS and storage pool cache,
5. RAM - 16GB, decent one but nothing extreme,
6. Storage - for start 2x4TB NAS type drives, up to 5-6 drives at peak
Finally all this will be connected with Cat.6 to Asus RT-AC66U router (through the Netgear GS108 switch if necessary) and HDMI to Onkyo A/V receiver which is located just behind the wall with other members of my living room entertainment system.

Software:
Although to some it may sound strange but I want to build my server based on Win10 Pro with storage space pool which provides good storage management and some level of data protection. Now comes my concern, shall I focus on OS and apps installation in the traditional way or maybe challenge myself a bit with Docker/Kitematic to extend OS integrity. I will be running Kodi (local playback) and Plex (streaming over LAN and Wi-Fi), some sort of P2P/usenet client with automation from SickBeard/SickRage/Sonarr and CouchPotato, VPN, web browser.

Apology if all that was a bit long but I would really like to hear your thoughts, suggestions and advice regarding solution that will be more reliable, hassle-free and with minimum maintenance. I hope this is not too much to desire/expect from good Media/File server Smile
